Hawaiian Style Shave Ice was born as I drove away from the world-famous Matsumoto’s Shave Ice stand in Haleiwa, Hawaii. Matsumoto’s is a simple shave ice stand in an old building on the side of the main road through Haleiwa (it used to be the highway around the north side of Oahu.) It is uncommon to drive by Matsumoto’s and not see a dozen people eating shave ice on the benches in front of the store.
As I enjoyed my Matsumoto’s shave ice, my thought was that Utah needed to have good shave ice like Matsumoto’s and the others I’ve had in Hawaii. I’ve had a couple of “shaved ice” or “snow cones” while in Utah and they just weren’t as good as what I grew up with in Hawaii. The “shave ice” (as it’s referred to by the locals) in Hawaii have a fluffier ice, bigger portions, and offer a scoop of vanilla ice cream in the bottom. (You don’t know how really good that is until you’ve had it.)
Matsumoto’s and other shave ice stands also offer the ambiance of Hawaii in their simpleness, localness, and friendliness. My goal is to have a shave ice stand that is in the mold of the country roadside stand in Hawaii. I want Utahns to be able to experience the better shave ice product in an authentic Hawaiian atmosphere with Aloha Spirit.
